Description
Pargo’s restaurants were founded in 1983 by Mitchell Boyd, a Shoney’s franchisee who wanted to create an upscale chain. The name is a portmanteau of his two children, Par and Margot. The restaurant was acquired by Shoneys outright in 1986 and grew to about 18 restaurants nationwide; including locations in Rivergate and Harding, as well as other states.
The restaurant strove to be your “favorite neighborhood restaurant” ala O’Charleys, TGI Fridays or Irelands. In hindsight, the menu feels to be a predictable mix of apps, various meats and seafood, speciality burgers, pasta, daily homemade soups, garden fresh salads, and fresh breads. At the time, it was a welcome and tasty treat; including the “Heart Healthy” menu and robust Kids offerings.
The restaurant was divested from the Shoney’s portfolio in 2000 but had been dwindling since the mid-90s. It had a good run and that coathanger “g” design is unforgettable.
